Watermelon-Lime Cooler

Ingredients
6 cups seedless watermelon chunks
4 tablespoons frozen limeade concentrate
2 tablespoons fresh lime juice
1 1/2 cups crushed ice
Lime slices for garnish
Instructions
Combine all ingredients in a blender and puree until smooth.
Pour in tall glasses.
Garnish with lime slices.
Watermelon Cake

Ingredients
1 oblong watermelon
2 cups heavy cream
1/4 cup sugar
2 teaspoons vanilla extract
1 cup sliced almonds
1 cup strawberries, hulled
1 cup blueberries
Instructions
Remove the rind from the cake.
Cut the watermelon into the shape of a cake. Use a cake pan as a reference.
Combine heavy cream, sugar, and vanilla and whisk on high until whipped cream thickens.
Pat watermelon dry with paper towels and fully coat with an even layer of whipped cream mixture.
Cover sides of cake with almond slices.
Make a ring along the top edge of cake using strawberries.
Cover the cake with blueberries.
Serve immediately or refrigerate until ready to serve.
Watermelon Slices with Mint and Lime
Ingredients
1 chilled seedless watermelon
1/2 bunch fresh mint
4 limes, 2 zested, 2 juiced
3/4 cup sugar
Instructions
Cut the watermelon into 2-inch-thick rounds and cut each into 4 wedges.
Chop the mint leaves and place in a medium bowl with 2 tablespoons of the lime zest. Add the sugar and stir well.
Squeeze the lime juice over the watermelon wedges. Sprinkle on the mint-lime sugar.
